EGG TART

EGG TART ( Short Crust Type)

Ingredients
General Purpose Flour 300g
Corn Flour 75g
Icing Sugar 75g
Egg 50g
Custard Powder 20g
Margarine/shortening 185g

Method:
Sift flour & custard together into mixing bowl, add in balance of ingredients and mix into a smooth dough.

1. To prepare syrup
Water 649g
Sugar 350g
Citric Acid/Lemon/Limau Nipis 3 drops


2. Egg Custard Filling

Syrup (35’Brix) 350g
Vanillin Powder 1g
Custard Powder 15g
Skimmed Milk Powder 30g (dissolved in water)
Chilled water 90g

3. Egg 233g (kacau saja)

Prepare No 1 and No 2 separately.
Pour 1 and 2 into 3 ( beaten egg)
Tapis bancuhan
Sejukkan.

Boil sugar, water & citric acid together until sugar dissolved.
Cool it before using.

Procedure
1. Lightly beat eggs in a bowl.
2. Dissolve custard powder in cold syrup, stir and add in balance of ingredients. Lightly mix well with beaten eggs.
3. Strain to remove coarse material
4. Chill in the chiller for 15-30 minutes.
5. Pour egg tart filling into each mould.
6. Bake at 130/190C for 30-40 minutes.
7. Cool down slightly, glace with glazing gel or intstant jelly.
To prepare instant jelly:
Dissolve 9g instant jelly powders, 40 sugar into 180g water.
Bring to boil.

SELAMAT MENCUBA...For me, egg tart is more delicious when its over baked!

Thank you for the recipe. Tak tahu bila nak cuba sebab sibuk dengan persiapan untuk buka sekolah. Pening kepala susun jadual waktu sebab asyik nak kena buat semula. Dah siap tiba-tiba cikgu bertukar. Yang dah pasti datang tiba-tiba tukar ke tempat lain. Susun semula. Siap kali kedua tiba-tiba dengar khabar dapat 2 orang guru KPLI. Maka kena buat semula.Buku pengurusan sekolah dah siap tapi kena pulak ikut format PPD. Kena ubah suai pulak..... Betul-betul naik angin!!!!! Anyway... itulah cabaran bekerja. So stree management sangat penting. Hari ni I tak buat apa-apa kerja sekolah. Seharian duduk kat dapur masak makanan kegemaran anak-anak.3 menu dah dijanjikan untuk hari ini, esok dan lusa. Lupa kerja sekolah. Happy tengok anak makan....
